Chia Seed Pudding

Chia Seed PuddingChia seeds are kind of fun. They are tiny, unassuming black seeds that transform into little jelly balls with a crunchy core when soaked in liquid. They are also full of nutrients, healthy fats, protein, fiber and antioxidants. Aztec warriors are said to have used these seeds for energy and endurance so why shouldn’t we?!

 

Ingredients:
  • 2 tablespoons chia seeds
  • ½ cup almond milk *
  • handful of berries or pomegranate seeds and ½ chopped green apple
  • toasted pecans (or any other nuts or seeds)
  • drizzle of honey or maple syrup (optional)

 

Preparation:
  • In a medium bowl, add the chia seeds and almond milk
  • Allow to sit for 15 minutes, stirring occasionally (you can place the porridge in the fridge after this for later use or overnight)
  • Top with berries, chopped apple, toasted pecans and drizzle with a bit of honey or maple syrup

Enjoy this pudding for breakfast or a snack!

 

* Almond Milk:

 

almond milkIngredients:
  • 1 cup almonds, soaked for 8 – 12 hours, rinse and drain
  • 4 cups of purified water
  • 3 pitted dates, soaked in a bit of hot water for 10 – 15 minutes
  • 1 tsp vanilla extract
  • 1 tablespoon extra virgin coconut oil
  • pinch of Himalayan salt

 

Preparation:
  • Combine almonds and water in a blender and process until smooth
  • Squeeze the mixture through a cloth mesh bag, nut milk bag or cheesecloth into a large bowl
  • Rinse the blender and put the milk back along with the remaining ingredients
  • Process until smooth
  • Store in glass bottles in the fridge for up to 5 days
