Breakfast Bowls

Inspired by a recent post by Andrea Nakayama about creating breakfast “hash” I have been engaged in a creative pursuit to make beautiful breakfast bowls.

I have to admit that this recent obsession was also somewhat motivated by indulgences during the holidays. We spent 2 weeks in India which always turns out like a culinary feast and upon our return to Manila I felt my body’s urgent craving for healthy, light and nutritious meals.

Breakfast bowls can go any way and be made of all kinds of different ingredients that catch your fancy but mine have been filled with low glycemic fruits, raw vegetables, soaked nuts, high fiber toppings and creamy drizzles. Perfect for a new year detox of sorts and a boost of nutrition first thing in the morning!

Here are two of my creations. Use it as a guideline and a way to get inspired to create you own beautiful and colourful combos.

 

carrot-apple-breakfast-bowlCarrot & Green Apple with Citrus Cashew Cream

 

Ingredients:

Citrus Cashew Cream:

  • 1/2 cup raw cashews, soaked for 4 hours (or overnight)
  • 1/4 to 1/2 cup water (adjust if needed to get the desired consistency)
  • juice of 1 orange
  • 1 tsp lemon juice
  • 1 tsp coconut nectar (or maple syrup or honey)
  • pinch of Himalayan salt

Preparation:

  • Place all the ingredients in a high speed blender and blend until creamy
  • Add more water if needed to make it pourable

Breakfast Bowl:

  • grated carrot
  • green apple, diced
  • chopped tigernuts (If you are in Asia like me, you will not be able to find these tiny little tubers that pack a punch of resistant starch and you can instead, use boiled, cooled and chopped potato to get similar benefits – more on resistant starch and its benefits soon, I promise!)
  • soaked walnuts, chopped
  • fresh mint leaves, chopped
Preparation:

Place the fruits, nuts and other ingredients in a bowl and top with the Citrus Cashew Cream drizzle

 

pomegranate-apple-breakfast-bowlPomegranate & Green Apple with Cinnamon Tahini Drizzle

 

Ingredients:

Tahini Drizzle:

  • 1/2 cup unsalted tahini
  • 3/4 cup water
  • 2 tsp lemon juice
  • pinch of Himalayan salt
  • 1/2 tsp cinnamon powder
  • 2 pitted dates

Preparation:

  • Place all the ingredients in a high speed blender and blend until creamy
  • Add more water if needed to make it pourable

Breakfast Bowl:

  • Pomegranate seeds
  • Green apple, diced
  • Chopped, peeled tigernuts
  • Soaked walnuts, roughly chopped
  • Toasted coconut flakes
Preparation:
  • Place the fruits, nuts and other ingredients in a bowl and top with the tahini drizzle

 

There you go! Now run wild with your own creations. You can go sweet or savory, raw or cooked. You can add your choice of superfoods such as cacao nibs, mulberries, or goji berries and you can make your drizzle from different kinds of nuts or seeds. Let me know what you come up with!
